Recipe: How to Make Indian Spiced Chili with Turkey and Quinoa with Tim

Indian Spiced Chili with Turkey and Quinoa

Prep time: 25 minutes
Cook time: 1 Hour

 

Ingredients:

 

1 lb

 Ground Turkey

2 Cups

White onion, Small Dice

1 Each

Red Bell Pepper, Small Dice

1 Each

Jalapeno, Small Dice (Remove seeds for mild flavor)

2 T

Garlic, Minced

2 T

Ginger, Minced

1 Cup

White Mushroom, Small Dice

1 Can

Garbanzo Beans

1 Can

Chili Beans (Pinto Beans in Chili Sauce)

1 Can

Diced Tomatoes

1 Cup

Red Quinoa

2 T

Indian Curry Seasoning

1 T

Lemon Pepper Seasoning

1 T

Crushed Red Chili Flakes

1 Quart

Chicken Stock

Salt + Pepper

    Instructions:

    1. In a Dutch Oven, cook turkey on medium-high with a few tablespoons of oil, Indian Curry Seasoning, salt, and pepper until golden brown, separating the pieces with a wooden spoon. Remove onto a plate with a few layers of paper towels.
    2. In the same pot, stir in mushrooms with a little salt and pepper to taste. Once the mushrooms are fragrant and start to brown. Add onions, bell peppers, and jalapenos and cook for 3-4 minutes. Once softened, stir in garlic, ginger, and chili flakes and sweat for 1-2 minutes.
    3. Stir in tomato sauce, lemon pepper seasoning, and a little more salt and pepper to taste. Simmer for 4-5 minutes or until it begins to look dry.
    4. Add the remaining ingredients and bring to a boil. Bring down to a low simmer and cover. Cook for 20 minutes and then cook uncovered for 20 minutes.
    5. Season to taste and garnish with your choice of crackers, avocado, fresh cilantro, yogurt, and lime wedges.
